Hey all! It’s Tieghan from Half Baked Harvest!
Excited to be back on The Chriselle Factor today sharing one of my favorites recipes that I created with Miss Hannah in mind, garlic parmesan fries with a smoky chipotle aioli!
I think we can all agree that fries are one of the most crave-worthy foods. They’re the salty carb that everyone desires on any given day of the week. And ordering them when out at restaurants is an absolute must. But did you know you can make fries at home that are actually healthy, easy, and just as delicious as your favorite fast food place?
Yes, it’s true, and today I’m sharing my french fry making secrets with all of you!
Ok, so ready? This is pretty simple.
You’ll need potatoes (obviously), a baking sheet, and an oven. Slice the potatoes into thin sticks (no need to peel them!) and toss them together with a little olive oil, garlic, parmesan cheese, salt, and pepper. Throw them in the oven and bake. Halfway through cooking, give them a toss, and then DONE.
Yes, it’s as simple as that. Just a handful of ingredients that you might already have on hand, one baking sheet, a little time, and you’ll have oven baked homemade fries that are healthier, but just as delicious as any fast food chain or restaurant. Promise.
If you want to be really fancy, you can whip up a quick aioli. I love making a smoky/spicy aioli with some chipotle chili powder and my favorite avocado oil mayo for a healthy dip that feels indulgent.
Serve these up at your next game day party, girl’s night, or just make them for yourself. Be sure to snap a picture for the gram (because they’re so incredibly good-looking, and everyone loves fries), and then proceed to eat the entire tray full and call it dinner!
Garlic Parmesan Fries with Chipotle Aioli
Serves 6
4 russet potatoes, cut into 1/4 inch wide strips
2 tablespoons extra virgin olive oil
1/2 cup grated parmesan cheese
2-3 cloves roasted garlic, grated
pinch of cayenne pepper
kosher salt and pepper to taste
2 tablespoons chopped fresh basil
Chipotle Aioli
1/2 cup avocado oil mayo
1/2 teaspoon chipotle chili powder
1/4 teaspoon smoked paprika
pinch of kosher salt
- Preheat the oven to 425 degrees F.
- Place cut potatoes in a large bowl and toss with oil. Add the parmesan, garlic, cayenne, salt and pepper. Toss with your hands to evenly coat. Spread the fries between two baking sheets in one even layer. Bake for 15-20 minutes, then turn the oven down to 400 degrees F, flip and bake for 15-20 minutes more.
- Remove from the oven and toss with fresh basil. Serve with the aioli (recipe below).
