Healthy, Low-Carb Cucumber Snacks — For Work and Home
It’s hard to find snacks that are healthy, satisfy your cravings AND taste good.
Luckily, I’ve got five healthy low-carb cucumber snacks that are delicious and super easy to make – just in time for summer. The entire office loves them and I’ve even gotten Chloe into a few as well! Not to mention they’re great to serve when you’ve got some company over! (Perhaps with a yummy cocktail as well?)
Cucumbers are just as refreshing as they are healthy for you. They’re full of antioxidants, high in many important vitamins and mineral and very low in calories. If you have any leftover, you can pop a couple on your eyes to depuff and a face mask for the ultimate spa feel! Each of the recipes below takes no more than 5 to 7 minutes to prepare (depending on quantity) and can store really easily in the fridge so you can pick on them throughout the week at home or at the office!

Ingredients: Cucumbers, sun-dried tomatoes, cheese (cheddar-gruyere)
This snack would be perfect to pair with a glass of wine after work. The sun-dried tomatoes and cheese give it a fancy feel which would be great as a snack at work, or for an easy appetizer for a dinner party. This is also one of the easiest of the low-carb cucumber snacks to prepare! If you're not a fan of sun-dried tomatoes, a small cherry tomato cut in half would taste just as good.
Ingredients: Cucumber slices, prosciutto, your favorite cheese (cheddar-gruyere pictured here)
The prosciutto & cucumber combo is delicious! If you're not a fan of prosciutto, then you can sub it for any meat like salami for a low carb take on a sandwich. For this snack, I rolled the prosciutto and placed it in-between two slices of cucumber and used the cheese as a garnish. If you're feeling extra fancy, you could stick a toothpick through to keep it together like a deli sandwich and add dijon mustard.
Avocado & Capers
Ingredients: Cucumber, mashed avocado, cilantro and capers
This one might be my favorite! I love guac and chips, but this is a much healthier version of that. To make these, I shaved the cucumber and cut them in half. Aftewards, I hollowed out the middle of the cucumbers to make a little boat, then added the guac and capers inside! You can use an organic premade guac or just mash some avocado with cilantro! The capers give it a nice punch of salt which makes these little guys seriously addicting.
Tuna & Crackers
Ingredients: Cucumbers, cajun pepper, canned tuna, crackers
If you feel like adding a little protein to your cucumber snack, then this is the recipe for you. For this, I added a little dollop of tuna (chicken salad would taste great, too!) on top of a whole grain cracker, added a slice of cucumber, then topped it off with a dash of cajun pepper for some spice! YUM!
Cucumber & Hummus
Ingredients: cucumbers, hummus, Everything Bagel Seasoning
Last but not least, the oh so classic cucumber and hummus combination! Just a little scoop of hummus on top of a slice of cucumber, topped off with some of the Everything Bagel seasoning from Trader Joe’s (an office favorite) is SO refreshing and yummy. For this, I used just classic hummus, but any other flavor of hummus would taste just as good!
